Lemon Posset is a classic British no-bake dessert known for its luxuriously creamy texture and bright citrus flavor. Made with just three main ingredients, it’s a simple yet elegant treat perfect for any occasion, from brunches to dinner parties.

- 2 cups heavy cream
- ¾ cup granulated sugar
- Zest of 2 lemons
- ½ cup fresh lemon juice (about 3–4 lemons)
- Optional: Fresh berries and mint leaves for garnish
Instructions
- In a medium saucepan, combine heavy cream and sugar. Bring to a gentle simmer over medium heat, stirring frequently for about 5 minutes until sugar dissolves. Do not boil.
- Remove from heat and stir in lemon zest and freshly squeezed lemon juice. Mix gently but thoroughly until well combined. Let cool at room temperature for 10 minutes.
- Pour the lemon cream mixture into ramekins, glasses, or jars, filling each about ¾ full. Wipe rims clean if necessary.
- Refrigerate for at least 4 hours or overnight until set into a silky, pudding-like consistency.
- Just before serving, top with fresh berries and mint leaves if desired.
