- Zest of 1 lemon
- 2 tablespoons freshly squeezed lemon juice
- ½ cup granulated sugar (for coating)
- 1 teaspoon lemon zest (for coating)
Instructions
- Preheat the oven to 350°F (175°C) and grease a donut pan.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk the eggs, milk, melted butter, lemon zest, and lemon juice until well combined.
- Pour the wet ingredients into the dry and gently fold until just combined; do not overmix.
- Fill each donut pan cavity about ⅔ full using a piping bag or spoon.
- Bake for 10–12 minutes or until lightly golden and a toothpick inserted comes out clean.
- While baking, mix ½ cup sugar with 1 teaspoon lemon zest for the coating.
- Cool donuts in the pan for 5 minutes, then transfer to a wire rack.
- Once cool enough to handle, roll each donut in the lemon sugar coating until well covered.
Notes
- Don’t overmix the batter to keep the donuts fluffy.
- Use proper lemon zesting technique—avoid the bitter white pith.
- Try vanilla or almond extract for flavor variation.
