Description

  • 1 cup granulated sugar

  • 2 large eggs
  • ½ cup whole milk (or milk substitute)
  • ⅓ cup melted butter (or oil for dairy-free)
  • Zest of 1 lemon
  • 2 tablespoons freshly squeezed lemon juice
  • ½ cup granulated sugar (for coating)
  • 1 teaspoon lemon zest (for coating)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a donut pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk the eggs, milk, melted butter, lemon zest, and lemon juice until well combined.
  4. Pour the wet ingredients into the dry and gently fold until just combined; do not overmix.
  5. Fill each donut pan cavity about ⅔ full using a piping bag or spoon.
  6. Bake for 10–12 minutes or until lightly golden and a toothpick inserted comes out clean.
  7. While baking, mix ½ cup sugar with 1 teaspoon lemon zest for the coating.
  8. Cool donuts in the pan for 5 minutes, then transfer to a wire rack.
  9. Once cool enough to handle, roll each donut in the lemon sugar coating until well covered.
