- 2 large eggs (filling)
- 1 cup granulated sugar (filling)
- 2 tablespoons all-purpose flour (filling)
- 1/2 cup freshly squeezed lime juice (about 4–5 limes, filling)
- Zest of 2 limes (filling)
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, powdered sugar, butter, and salt until crumbly. Press into a greased 8×8 inch baking dish and bake for 15 minutes until lightly golden.
- While the crust bakes, whisk together eggs, granulated sugar, and flour until smooth. Stir in lime juice and zest.
- Pour the lime filling over the slightly cooled crust and bake for 20–25 minutes, or until set with a slight jiggle in the center.
- Cool completely at room temperature, then dust with powdered sugar.
- Cut into squares and serve chilled or at room temperature.

- Store in the refrigerator for up to 1 week or freeze for up to 2 months.
- Use a zester for maximum lime flavor.
