- 1 pound mascarpone cheese
- 2 teaspoons finely grated lemon zest (plus extra for garnish)
- 1/4 teaspoon kosher salt
- 2 (7-ounce) boxes ladyfingers (about 48)
- 2 1/2 cups store-bought lemonade
- 1 1/2 cups limoncello (homemade or store-bought)
- 1 1/2 cups lemon curd (homemade or store-bought), divided
Instructions
- In a large bowl, beat the heavy cream and confectioners’ sugar with a mixer until medium peaks form. Do not over-whip.
- In another bowl, mix mascarpone, lemon zest, and kosher salt until combined.
- Fold one-third of the whipped cream into the mascarpone to lighten it, then fold in the rest until fully combined.
- In a shallow dish, mix lemonade and limoncello. Dip each ladyfinger briefly (1 second per side) into the mixture.
- Line a 13″ x 9″ pan with a layer of dipped ladyfingers (2 rows of 12).
- Spread half of the mascarpone cream mixture over the ladyfingers.
- Spoon 1 cup of lemon curd over the mascarpone layer and gently spread.
- Repeat the dipping process and place another layer of ladyfingers.
- Spread the remaining 1/2 cup lemon curd over the second layer of ladyfingers.
- Transfer remaining mascarpone cream to a piping bag and pipe dollops on top.
- Cover with plastic wrap and refrigerate at least 3 hours or overnight.
- Before serving, garnish with thinly sliced lemon zest.
