Ingredients

  • 1 cup (120g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (60g) unsalted butter, melted
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 8 oz (225g) cream cheese, softened
  • 1/2 cup (120ml) mango puree (fresh or canned)
  • 1/4 cup (50g) powdered sugar (plus extra for dusting)
  • 1 large egg
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8 inch (20×20 cm) baking pan.
  2. In a mixing bowl, combine flour, sugar, melted butter, salt, and vanilla extract to form a crumbly dough. Press into the bottom of the pan.
  3. Bake the crust for about 10 minutes until lightly golden, then let it cool slightly.
  4. Beat the softened cream cheese until smooth, then add powdered sugar, egg, mango puree, and lemon juice. Mix until creamy.
  5. Pour the cream cheese mixture over the crust, then drop dollops of mango puree on top and swirl with a knife.
  6. Bake for an additional 25-30 minutes until the filling is set and edges are golden.
  7. Cool completely, refrigerate for at least 2 hours, then cut into squares.
  8. Dust with powdered sugar before serving.
