- 1 cup (120g) all-purpose flour
- 1/2 cup (100g) granulated sugar
- 1/4 cup (60g) unsalted butter, melted
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 8 oz (225g) cream cheese, softened
- 1/2 cup (120ml) mango puree (fresh or canned)
- 1/4 cup (50g) powdered sugar (plus extra for dusting)
- 1 large egg
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8 inch (20×20 cm) baking pan.
- In a mixing bowl, combine flour, sugar, melted butter, salt, and vanilla extract to form a crumbly dough. Press into the bottom of the pan.
- Bake the crust for about 10 minutes until lightly golden, then let it cool slightly.
- Beat the softened cream cheese until smooth, then add powdered sugar, egg, mango puree, and lemon juice. Mix until creamy.
- Pour the cream cheese mixture over the crust, then drop dollops of mango puree on top and swirl with a knife.
- Bake for an additional 25-30 minutes until the filling is set and edges are golden.
- Cool completely, refrigerate for at least 2 hours, then cut into squares.
- Dust with powdered sugar before serving.
