Instructions
- Prepare the Tart Crust: In a mixing bowl, combine flour, powdered sugar, and salt. Add chilled butter and blend until the mixture resembles coarse crumbs.
- Incorporate Wet Ingredients: Mix in the egg yolk and 2 tablespoons of ice water. Stir until the dough forms. Add more water if needed. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.
- Blind Bake the Tart Crust: Preheat the oven to 350°F (175°C). Roll out the dough and place it into a tart pan. Prick the bottom and line with parchment paper. Fill with pie weights or dry beans. Bake for 15 minutes, remove the weights, and bake for another 10 minutes until golden brown. Cool completely.
- Prepare the Mango Curd: In a saucepan, whisk together mango puree, granulated sugar, and eggs. Stir until the mixture thickens, about 10 minutes. Remove from heat and stir in butter, lime juice, lime zest, and salt until smooth.
- Fill the Tart: Pour the mango curd into the cooled tart shell, smoothing it out. Refrigerate for at least 4 hours or until set.
- Serve and Enjoy: Once chilled and set, slice the tart and serve. Optionally, top with whipped cream or additional mango slices.
