  • 1 cup powdered sugar
  • 23 tablespoons passion fruit juice (fresh or bottled)
  • Zest of 1 passion fruit or orange (optional)

Instructions

  1. Peel and chop mangoes, then blend into a smooth puree; set aside.
  2. In a large bowl, combine granulated sugar, brown sugar, vegetable oil, and mango puree. Mix well.
  3. Add eggs, vanilla extract, and milk; whisk until smooth and creamy.
  4. In a separate bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
  5. Fold dry ingredients into wet mixture gently; do not overmix. Batter should be slightly lumpy.
  6. Preheat oven to 350°F (175°C). Line or grease muffin tin.
  7. Fill muffin cups two-thirds full with batter. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. While baking, whisk powdered sugar and passion fruit juice until smooth. Add zest if using.
