Instructions
- Preheat oven to 350°F (175°C). Grease or line a baking dish with parchment paper.
- In a large bowl, mix rolled oats, flour, brown sugar, baking soda, and salt.
- Stir in melted butter and honey (or maple syrup) until the mixture becomes crumbly.
- Press half the mixture firmly into the prepared dish to form the base.
- In another bowl, mix diced mangoes, granulated sugar, cornstarch, vanilla extract, and lemon juice until mangoes are evenly coated.
- Spread the mango filling evenly over the oat base.
- Sprinkle the reserved oat mixture over the top as the crumble topping.
- Bake for 30–35 minutes or until the top is golden brown and the filling is bubbling.
- Let cool at room temperature for 15–20 minutes, then chill in the refrigerator for at least 1 hour before slicing.
