  • 1/4 cup honey or maple syrup
  • 3 cups ripe mango, peeled and diced (about 3 medium mangoes)
  • 1/4 cup granulated sugar (adjust to taste)
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a baking dish with parchment paper.
  2. In a large bowl, mix rolled oats, flour, brown sugar, baking soda, and salt.
  3. Stir in melted butter and honey (or maple syrup) until the mixture becomes crumbly.
  4. Press half the mixture firmly into the prepared dish to form the base.
  5. In another bowl, mix diced mangoes, granulated sugar, cornstarch, vanilla extract, and lemon juice until mangoes are evenly coated.
  6. Spread the mango filling evenly over the oat base.
  7. Sprinkle the reserved oat mixture over the top as the crumble topping.
  8. Bake for 30–35 minutes or until the top is golden brown and the filling is bubbling.
  9. Let cool at room temperature for 15–20 minutes, then chill in the refrigerator for at least 1 hour before slicing.
