Description
Refreshing and creamy mango popsicles that capture the tropical sweetness of ripe mangoes blended with coconut milk and a hint of lime, perfect for cooling down on hot days.

- 2 large ripe mangoes (about 3 cups mango puree)
- 1 cup full-fat coconut milk
- 2–4 tablespoons honey or maple syrup (adjust to taste)
- 2 tablespoons freshly squeezed lime juice
- ¼ teaspoon pinch of salt
Instructions
- Wash mangoes thoroughly, slice in half, remove pit, and scoop out the flesh.
- Place mango flesh in a blender.
- Add coconut milk, honey or maple syrup, lime juice, and salt to the blender.
- Blend on high speed until smooth and creamy. Adjust sweetness or lime juice if desired.
- Pour mixture into popsicle molds, filling about ¾ full.
- Cover molds with lids or plastic wrap and freeze for 4-6 hours or overnight until solid.
- To serve, run molds under warm water briefly to loosen popsicles and remove carefully.
Notes
- Use peaches, pineapples, or strawberries as an alternative to mangoes for different flavors.
- Substitute almond or oat milk for coconut milk for a different dairy-free option.
- Use agave syrup for a vegan sweetener or stevia for sugar-free version.
- Lemon juice can replace lime juice for a different citrus twist.
- If no popsicle molds, use small paper cups and insert sticks after partial freezing.
