Description

Mango Sticky Rice, or Khao Niew Mamuang, is a traditional Thai dessert featuring chewy glutinous rice paired with sweet ripe mango slices, all enhanced by a creamy coconut milk sauce. This dessert offers a rich, refreshing balance of flavors and is often enjoyed during mango season or festive occasions.

Ingredients

Scale
  • 1 cup glutinous (sticky) rice
  • 1 ½ cups coconut milk
  • ½ cup sugar
  • ¼ teaspoon salt
  • 2 ripe mangoes
  • 1 tablespoon sesame seeds or mung beans (optional, for garnish)

Instructions

  1. Rinse 1 cup of glutinous rice under cold water until clear, then soak in water for at least 4 hours or overnight.
  2. Drain and steam the rice in a cheesecloth-lined steamer basket over boiling water for 20–30 minutes until translucent and tender.
  3. In a saucepan, heat 1 ½ cups coconut milk, ½ cup sugar, and ¼ teaspoon salt over low heat, stirring until sugar dissolves. Do not boil. Reserve ½ cup for drizzling.
  4. Transfer cooked rice to a bowl, pour in the warm coconut sauce (except reserved portion), fold gently, and let sit for 30 minutes to absorb flavors.
  5. Peel and slice ripe mangoes into thin strips or wedges.
  6. Serve sticky rice topped with mango slices and drizzle reserved coconut sauce. Optionally, sprinkle with sesame seeds or mung beans.

Notes

  • Use ripe mangoes that feel slightly soft for best flavor.
  • Soaking the rice is crucial to achieve the right chewy texture.
  • Do not overcook the rice to avoid mushiness.
  • Add pandan leaves during steaming for extra fragrance (optional).
  • Store leftover sticky rice and mango separately in airtight containers.
  • Reheat sticky rice with a splash of coconut milk to restore moisture.
