Description

Ingredients

  • 2 teaspoons baking powder
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • 1/2 cup milk
  • 1 cup diced apples (about 2 medium apples)
  • 1/2 cup pure maple syrup plus extra for drizzling
  • Vegetable oil for frying

Instructions

  1. In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, salt, and ground cinnamon until well combined.
  2. In a separate bowl, beat the eggs and then add the milk and 1/2 cup of pure maple syrup. Mix until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the diced apples until evenly distributed.
  4. In a deep skillet or pot, pour enough vegetable oil to reach a depth of about 2 inches. Heat the oil over medium heat until it reaches 350°F (175°C).
  5. Using a tablespoon or a small cookie scoop, carefully drop spoonfuls of the batter into the hot oil, frying for about 2-3 minutes on each side until golden brown.
  6. In a small bowl, mix together the remaining maple syrup with a little powdered sugar to create a thicker glaze if desired.
  7. Once the fritters have cooled slightly, drizzle the maple glaze over the top.
  8. Arrange the fritter bites on a serving platter and serve warm.
