Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the rolled oats, all-purpose flour, baking powder, salt, ground cinnamon, and ground nutmeg.
  3. In another bowl, whisk together the pumpkin puree, maple syrup, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until just combined. Fold in the chopped pecans gently.
  5. Drop rounded tablespoons of dough onto a baking sheet, spacing them about 2 inches apart, and flatten slightly.
