  • 1 cup coconut milk (full-fat for creaminess)
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups almond flour
  • 1/2 cup unsweetened shredded coconut
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup melted coconut oil

Instructions

  1. Prepare the Ice Cream Base: In a mixing bowl, combine the coconut milk, sugar, matcha powder, and vanilla extract. Whisk until smooth and well combined. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions. If you don’t have an ice cream maker, pour the mixture into a shallow dish and freeze, stirring every 30 minutes until it reaches a creamy consistency.
  2. Make the Cookies: Preheat your oven to 350°F (175°C). In a bowl, mix the almond flour, baking powder, salt, and shredded coconut. In another bowl, cream together the melted coconut oil and sugar until fluffy. Gradually add the dry ingredients to the wet mixture, stirring until combined. Scoop tablespoon-sized portions onto a baking sheet lined with parchment paper, spacing them apart. Bake for 10-12 minutes or until lightly golden.
  3. Assemble the Sandwiches: Once the cookies are cool, take one cookie and place a scoop of matcha ice cream on the flat side. Top with another cookie, pressing gently to create a sandwich. Repeat until all cookies and ice cream are used.
  4. Freeze the Sandwiches: Place the assembled sandwiches in the freezer for at least 1 hour to firm up.
