- 2 cups rotini pasta (uncooked)
- 1 lb grilled chicken breast (sliced)
- 4 cups romaine lettuce (chopped)
- 1 cup cherry tomatoes (halved)
- 1/2 cup Kalamata olives (pitted and sliced)
- 1 cup feta cheese (crumbled)
- 1/2 cup Caesar dressing (store-bought or homemade)
- 1/4 cup fresh parsley (chopped, for garnish)
- Salt and pepper (to taste)
Instructions
- Boil water in a large pot, add rotini pasta, and cook until al dente. Drain and rinse under cold water.
- If using leftover chicken, dice it. If cooking fresh, grill or bake until fully cooked, then cool and dice.
- In a large mixing bowl, combine cooled rotini pasta, sliced grilled chicken, chopped romaine lettuce, halved cherry tomatoes, sliced Kalamata olives, and crumbled feta cheese.
- Drizzle Caesar dressing over the salad mixture and gently toss until evenly coated. Season with salt and pepper as needed.

- Store leftovers in an airtight container in the refrigerator for 2-3 days.
