Description

A delightful twist on a classic dish, this Mediterranean Chicken Caesar Pasta Salad combines tender chicken, crisp vegetables, and flavorful pasta, all tossed in a creamy Caesar dressing.


Ingredients

  • 2 cups rotini pasta (uncooked)
  • 1 lb grilled chicken breast (sliced)
  • 4 cups romaine lettuce (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1/2 cup Kalamata olives (pitted and sliced)
  • 1 cup feta cheese (crumbled)
  • 1/2 cup Caesar dressing (store-bought or homemade)
  • 1/4 cup fresh parsley (chopped, for garnish)
  • Salt and pepper (to taste)

Instructions

  1. Boil water in a large pot, add rotini pasta, and cook until al dente. Drain and rinse under cold water.
  2. If using leftover chicken, dice it. If cooking fresh, grill or bake until fully cooked, then cool and dice.
  3. In a large mixing bowl, combine cooled rotini pasta, sliced grilled chicken, chopped romaine lettuce, halved cherry tomatoes, sliced Kalamata olives, and crumbled feta cheese.
  4. Drizzle Caesar dressing over the salad mixture and gently toss until evenly coated. Season with salt and pepper as needed.

Notes
