Description

Mini Apple Pies are adorable, bite-sized desserts filled with sweet and spiced apples wrapped in a flaky, buttery crust. Perfect for fall or any time of year, they combine warm cinnamon, nutmeg, and a golden finish to create a nostalgic, irresistible treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 6 to 8 tablespoons ice water (as needed)
  • 3 to 4 medium-sized apples (such as Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 egg (for egg wash, optional)

Instructions

  1. In a large bowl, mix flour, granulated sugar, and salt. Add chilled butter and blend until the mixture resembles coarse crumbs.
  2. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat oven to 375°F (190°C). In another bowl, mix apple slices with brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Let sit for 10 minutes.
  4. Roll out chilled dough on a floured surface to 1/8-inch thickness. Cut out 4-inch circles. You’ll need two per pie – one for the bottom and one for the top.
  5. Grease a muffin tin. Press one dough circle into each cup. Fill with apple mixture. Cover with another dough circle and crimp the edges. Optionally, add slits for venting and brush with egg wash.
  6. Bake for 20–25 minutes or until the crust is golden and the filling is bubbling. Cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

  • For gluten-free pies, use a gluten-free flour blend.
  • Use vegan butter to make the crust dairy-free.
  • Try caramel sauce, cranberries, or walnuts for filling variations.
  • Serve with vanilla ice cream or whipped cream for extra indulgence.
