A delightful twist on a classic dish, this Mini BBQ Meatloaf is packed with flavor and features a sweet and tangy barbecue glaze.


Ingredients

  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/2 cup barbecue sauce (plus more for topping)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, egg, barbecue sauce, Worcestershire sauce, salt, and pepper. Mix until well combined.
  3. Divide the mixture into equal portions, about 1/3 cup each, and shape into mini loaves on a prepared baking sheet.
  4. Bake for 25-30 minutes, brushing with additional barbecue sauce after 25 minutes, until the internal temperature reaches 160°F (70°C).
  5. Let the mini meatloaves rest for 5 minutes after baking to lock in the juices. Serve warm, garnished with freshly chopped parsley or green onions if desired.
  6. Pair with mashed potatoes, roasted veggies, or a crisp salad for a complete meal.
