- 1 cup fresh blackberries, plus extra for garnish
- 1 tablespoon fresh thyme leaves, chopped (plus extra for garnish)
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with mini muffin liners.
- In a small saucepan, combine the fresh blackberries with 2 tablespoons of granulated sugar and cook until they form a thick sauce.
- In a medium bowl, whisk together the flour, remaining sugar, baking powder, and salt.
- In another bowl, mix the melted butter, milk, egg, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Fold in the chopped fresh thyme leaves into the batter.
- Spoon batter into each muffin cup, filling them halfway, then add a teaspoon of blackberry compote, and cover with more batter.
- Bake for 15-18 minutes, or until a toothpick comes out clean.
- Let the cakes cool in the tin for 5 minutes before transferring to a wire rack.
- Dust with powdered sugar and garnish with thyme and blackberries before serving.
