Description

These Mini Chocolate Chip Muffins are delightfully soft, moist, and studded with melty chocolate chips. Made with Greek yogurt for extra richness and maple syrup for natural sweetness, they’re perfect for breakfast, lunchboxes, or anytime snacking.

Ingredients

Scale
  • 1 cup plain full-fat Greek yogurt
  • 1/4 cup unsalted butter, melted and slightly cooled
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup maple syrup
  • 1 1/2 cups all-purpose flour
  • 1 cup mini chocolate chips

Instructions

  1. Prepare the Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  2. Mix the Wet Ingredients: In a separate bowl, combine the yogurt, maple syrup, vanilla, and melted butter. Whisk until smooth, then beat in the eggs one at a time.
  3. Combine Wet and Dry: Gently fold the dry mixture into the wet ingredients using a rubber spatula until just combined. Avoid overmixing.
  4. Fold in Chocolate Chips: Stir in the mini chocolate chips until evenly distributed throughout the batter.
  5. Bake: Preheat oven to 350°F (175°C). Line or grease a mini muffin pan and fill each cup about 3/4 full. Optionally, top with extra chocolate chips. Bake for 12–14 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool and Serve: Let muffins cool in the pan for 2–3 minutes, then transfer to a wire rack to cool completely.

Notes

  • Dairy-Free: Use plant-based yogurt and butter alternatives.
  • Gluten-Free: Replace flour with a 1:1 gluten-free flour blend.
  • Sweetener Substitutes: Use agave nectar or honey in place of maple syrup.
  • Flavor Options: Add cinnamon, nutmeg, or chopped nuts for variety.
