Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8-inch baking dish by greasing it lightly.
- Unroll the phyllo pastry sheets and cover them with a damp cloth. Brush one sheet with melted butter and place it in the baking dish. Repeat until you have about 6 sheets layered.
- In a large mixing bowl, beat the cream cheese until smooth. Add sugar and mix well. Then, add sour cream, eggs, vanilla extract, and salt, mixing until creamy..
- Pour the cheesecake filling over the layered phyllo pastry, spreading it evenly.
- Layer the remaining phyllo sheets on top, brushing each with melted butter, using about 4 sheets.
- Bake for 30-35 minutes until the top is golden brown and the cheesecake is set.
- Allow to cool at room temperature for 15 minutes, then refrigerate for at least 2 hours to set completely.
