Instructions

  1. Preheat oven to 350°F (175°C).
  2. Prepare the crust: Combine flour, sugar, and salt. Cut in softened butter until mixture resembles coarse crumbs. Gradually add ice water until dough forms. Divide dough into small balls and press into bottoms of mini pie pans or muffin tin.
  3. Make the filling: Dissolve baking soda in hot water. Stir in molasses, cinnamon, and salt. Add beaten egg and mix well.
  4. Prepare crumb topping: Mix flour, brown sugar, baking powder, and salt. Pour in melted butter and mix until crumbly.
  5. Assemble pies: Pour filling halfway into crusts. Sprinkle crumb topping generously over filling.
  6. Bake for 15-20 minutes until topping is golden and filling is set.
  7. Cool slightly before removing from pans and serve warm or at room temperature.
