  • 2 medium sweet potatoes
  • 2 ripe avocados
  • 2 tablespoons olive oil (plus extra for drizzling)
  • Sea salt to taste
  • Black pepper to taste
  • 1 tablespoon lime juice (freshly squeezed)
  • Microgreens for garnish (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the sweet potatoes, then slice them into rounds about 1/4 inch thick.
  3. Toss the sweet potato rounds with 1 tablespoon of olive oil, sea salt, and black pepper until well coated.
  4. Spread the seasoned sweet potato rounds in a single layer on a baking sheet lined with parchment paper and roast for about 20-25 minutes, flipping halfway through.
  5. While the sweet potatoes are roasting, cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Add lime juice, sea salt, and black pepper, then mash until smooth.
  6. Once the sweet potato rounds are done, let them cool slightly and spread the avocado mixture on each round.
  7. Drizzle with olive oil and sprinkle with microgreens.
  8. Serve warm on a platter as a delightful appetizer or snack.
