Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the sweet potatoes, then slice them into rounds about 1/4 inch thick.
- Toss the sweet potato rounds with 1 tablespoon of olive oil, sea salt, and black pepper until well coated.
- Spread the seasoned sweet potato rounds in a single layer on a baking sheet lined with parchment paper and roast for about 20-25 minutes, flipping halfway through.
- While the sweet potatoes are roasting, cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Add lime juice, sea salt, and black pepper, then mash until smooth.
