Ingredients

  • 1 cup of chopped pecans (plus extra for topping)
  • 1 cup of semi-sweet chocolate (chopped or chocolate chips)
  • 3/4 cup of packed brown sugar
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of sea salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the pie crusts in a muffin tin.
  3. Toast the chopped pecans in a dry skillet over medium heat for about 5 minutes.
  4. Melt the semi-sweet chocolate in a microwave-safe bowl.
  5. Whisk together brown sugar, eggs, vanilla extract, and sea salt in a mixing bowl.
  6. Gradually add the melted chocolate to the mixture.
  7. Fold in the toasted pecans.
  8. Spoon the filling into each mini pie crust, filling them about 3/4 full.
  9. Bake for 20-25 minutes until the filling is set.
  10. Cool in the muffin tin for 10 minutes, then transfer to a wire rack.
