- 1 cup of chopped pecans (plus extra for topping)
- 1 cup of semi-sweet chocolate (chopped or chocolate chips)
- 3/4 cup of packed brown sugar
- 2 large eggs
- 1 teaspoon of vanilla extract
- 1/4 teaspoon of sea salt
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the pie crusts in a muffin tin.
- Toast the chopped pecans in a dry skillet over medium heat for about 5 minutes.
- Melt the semi-sweet chocolate in a microwave-safe bowl.
- Whisk together brown sugar, eggs, vanilla extract, and sea salt in a mixing bowl.
- Gradually add the melted chocolate to the mixture.
- Fold in the toasted pecans.
- Spoon the filling into each mini pie crust, filling them about 3/4 full.
- Bake for 20-25 minutes until the filling is set.
- Cool in the muffin tin for 10 minutes, then transfer to a wire rack.
Notes
