Instructions

- Add the eggs one at a time, mixing well after each addition. Stir in the peppermint extract until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until combined. Do not overmix.
- Using a spatula, gently fold in the chocolate chips and softened mint chocolate chip ice cream until evenly distributed.
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper. Drop spoonfuls of dough onto the sheets, spacing them 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden. The centers may appear slightly underbaked.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
