Description

Mint Chocolate Chip Protein Balls are a refreshing and healthy snack combining chewy oats, creamy almond butter, and mini chocolate chips with a cool peppermint twist—perfect for on-the-go energy or guilt-free indulgence.


Ingredients

  • ½ cup almond butter (or any nut butter of your choice)
  • ½ cup vanilla protein powder
  • ¼ cup honey or maple syrup
  • 1 tsp peppermint extract
  • ½ cup mini chocolate chips
  • Pinch of salt
  • Optional: 2-3 tablespoons of water (as needed)

Instructions

  1. In a large mixing bowl, combine rolled oats, vanilla protein powder, and a pinch of salt.
  2. In a separate bowl, mix almond butter, honey or maple syrup, and peppermint extract until smooth.
  3. Pour the wet mixture into the dry ingredients and stir to combine. If needed, add water to help the dough come together.
  4. Fold in the mini chocolate chips.
  5. Use your hands to roll about 1 tablespoon of the mixture into balls and place them on a parchment-lined plate or tray.
  6. Chill the balls in the refrigerator for at least 30 minutes.
  7. Serve chilled or store for later.
