- ¼ cup honey or maple syrup

- ½ cup mini chocolate chips
- Pinch of salt
- Optional: 2-3 tablespoons of water (as needed)
Instructions
- In a large mixing bowl, combine rolled oats, vanilla protein powder, and a pinch of salt.
- In a separate bowl, mix almond butter, honey or maple syrup, and peppermint extract until smooth.
- Pour the wet mixture into the dry ingredients and stir to combine. If needed, add water to help the dough come together.
- Fold in the mini chocolate chips.
- Use your hands to roll about 1 tablespoon of the mixture into balls and place them on a parchment-lined plate or tray.
- Chill the balls in the refrigerator for at least 30 minutes.
- Serve chilled or store for later.
