Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, mash the ripe bananas until smooth. Add the miso paste, brown sugar, melted butter, eggs, and vanilla extract. Whisk until well combined and smooth.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and sea salt.
  4. Gradually add the dry ingredients to the banana mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
  5. Pour the batter into the prepared cake pan, smoothing the top with a spatula. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
