Description

Mounds Poke Cake is a rich, indulgent dessert made with chocolate cake, sweetened condensed milk, shredded coconut, and whipped topping, creating a deliciously gooey and moist treat. It’s a perfect dessert for chocolate lovers and can be customized for dietary needs.

Ingredients

Scale
  • 1 box chocolate cake mix
  • 3 large eggs
  • 1 cup water
  • 1/2 cup vegetable oil
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup shredded coconut (sweetened)
  • 1 cup semi-sweet chocolate chips
  • 1 (8 oz) tub whipped topping (like Cool Whip)
  • 1/2 cup chocolate syrup
  • Additional shredded coconut for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chocolate cake mix, eggs, water, and vegetable oil. Beat with an electric mixer on medium speed for 2 minutes until smooth.
  3. Pour the batter into a greased 9×13 inch baking pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  4. Allow the cake to cool for 10-15 minutes. Once slightly cooled, poke holes in the cake using the handle of a wooden spoon.
  5. In a mixing bowl, combine the sweetened condensed milk, 1/2 cup chocolate syrup, and shredded coconut. Pour evenly over the cake, ensuring it seeps into the holes. Let it sit for 30 minutes or refrigerate to speed up the process.
  6. Top the cake with whipped topping, drizzle with remaining chocolate syrup, and sprinkle with shredded coconut.
  7. Chill the cake in the refrigerator for at least an hour before serving.

Notes

  • If you’re making it dairy-free, substitute sweetened condensed milk with almond or coconut milk, and use dairy-free chocolate chips and whipped topping.
  • For a gluten-free version, use a gluten-free chocolate cake mix.
  • For a reduced sugar version, opt for a sugar-free cake mix and sugar-free condensed milk.
  • Consider adding flavor variations like peppermint extract or espresso powder for a twist on the classic recipe.
