  • 2 tablespoons all-purpose flour (for lemon filling)
  • ½ cup freshly squeezed lemon juice (about 23 lemons)
  • Zest from 1 lemon
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Cream together the softened butter and sugar until light and fluffy. Add the egg and vanilla extract, and mix until combined.
  2. In another bowl, combine flour, baking powder, and salt. Gradually mix dry ingredients into the wet mixture until a soft dough forms.
  3. Lightly grease a muffin tin or use liners. Scoop about 1 tablespoon of dough into each cup and press to form a well up the sides.
  4. In a clean bowl, whisk together the eggs and sugar for the filling. Add flour, then lemon juice and zest. Mix until smooth.
  5. Fill each cookie cup ¾ full with the lemon filling. Bake for 20–25 minutes, until filling is set and tops are slightly golden.
  6. Let cookie cups cool in the tin for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar if desired before serving.
