- 3 ripe nectarines, pitted and sliced
- 1/2 cup (115 g) unsalted butter, divided
- 1/2 cup (100 g) brown sugar
- 1 cup (100 g) almond flour
- 1 cup (120 g) all-purpose flour
- 1 cup (200 g) granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Melt 1/4 cup of butter in a saucepan, stir in brown sugar, and pour into a cake pan. Arrange nectarines on top.
- Cream together the remaining butter and granulated sugar until fluffy. Beat in eggs one at a time, then stir in vanilla.
- Whisk together almond flour, all-purpose flour, baking powder, and salt. Gradually add to the wet mixture until just combined.
- Pour the batter over the nectarines and smooth the top. Bake for 35-40 minutes until golden brown.
- Let the cake cool for 10 minutes, then invert onto a serving plate.
