A delightful salad combining fresh flavors and creamy textures with ripe nectarines and burrata cheese.
Ingredients

- 250 grams (about 9 oz) of fresh pasta
- 2 ripe nectarines, sliced
- 200 grams (about 7 oz) of creamy burrata
- 2 cups of arugula, packed
- 1 cup of cherry tomatoes, halved
- 1/4 cup of fresh basil, torn
- 3 tablespoons of olive oil
- 2 tablespoons of balsamic glaze
- Salt to taste
- Pepper to taste
Instructions
- Cook the pasta in a large pot of salted water until al dente, then drain and rinse under cold water.
- Wash and slice the nectarines into thin wedges.
- In a large mixing bowl, combine the cooked pasta, sliced nectarines, arugula, halved cherry tomatoes, and torn basil leaves.
- Drizzle olive oil over the salad and season with salt and pepper, then toss gently.
- Tear the burrata into pieces and place it on top of the salad.
- Drizzle balsamic glaze over the salad.
- Transfer to a serving platter and enjoy immediately.
Notes
- Store leftovers in an airtight container in the refrigerator for up to two days.
- Best served chilled or at room temperature.
- For added flavor, let the salad sit for a few minutes after mixing.
