Nectarine Burrata Pasta Salad

Description

A delightful salad combining fresh flavors and creamy textures with ripe nectarines and burrata cheese.


Ingredients

Scale
  • 250 grams (about 9 oz) of fresh pasta
  • 2 ripe nectarines, sliced
  • 200 grams (about 7 oz) of creamy burrata
  • 2 cups of arugula, packed
  • 1 cup of cherry tomatoes, halved
  • 1/4 cup of fresh basil, torn
  • 3 tablespoons of olive oil
  • 2 tablespoons of balsamic glaze
  • Salt to taste
  • Pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted water until al dente, then drain and rinse under cold water.
  2. Wash and slice the nectarines into thin wedges.
  3. In a large mixing bowl, combine the cooked pasta, sliced nectarines, arugula, halved cherry tomatoes, and torn basil leaves.
  4. Drizzle olive oil over the salad and season with salt and pepper, then toss gently.
  5. Tear the burrata into pieces and place it on top of the salad.
  6. Drizzle balsamic glaze over the salad.
  7. Transfer to a serving platter and enjoy immediately.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to two days.
  • Best served chilled or at room temperature.
  • For added flavor, let the salad sit for a few minutes after mixing.
