  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 2 tbsp granulated sugar (optional)
  • 1 cup whipped cream
  • Fresh berries for garnish
  • Mint leaves for garnish (optional)

Instructions

  1. In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter until combined; press evenly into the bottom of a 9×13 inch dish and refrigerate.
  2. Beat softened cream cheese until smooth; gradually add powdered sugar and vanilla extract.
  3. Whip heavy cream to stiff peaks; gently fold into cream cheese mixture.
  4. Spread half of the cream cheese mixture over the chilled crust.
  5. Toss mixed berries with sugar if using, let sit 10 minutes; spread berries over cream cheese layer.
  6. Spread remaining cream cheese mixture over berries, then add another layer of berries on top.
  7. Spread whipped cream over the top layer of berries; garnish with fresh berries and mint leaves if desired.
  8. Cover and refrigerate for at least 4 hours or overnight before serving.
