Ingredients

  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • Mint leaves for garnish
  • Berry glaze (optional) for topping

Instructions

  1. Prepare the crust by combining graham cracker crumbs with melted butter and pressing into a 9×9 inch baking dish.
  2. Make the cream cheese filling by beating softened cream cheese, powdered sugar, and vanilla extract until smooth.
  3. Fold in the whipped cream gently into the cream cheese mixture.
  4. Layer half of the cream cheese filling over the crust, add a layer of mixed berries, and repeat with remaining filling and berries.
  5. Chill the dessert covered for at least 4 hours until set.
  6. Serve chilled, cut into squares, and garnish with mint leaves and optional berry glaze.
