- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream, cold
- 1 cup graham cracker crumbs
- 4 tablespoons unsalted butter, melted
- 1 cup cherry pie filling (for topping)
- Fresh cherries for garnish (optional)
Instructions
- In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated and resemble wet sand.
- Using a mini muffin tin, press about 1 tablespoon of the graham cracker mixture into the bottom of each cup, creating a firm base. Place the muffin tin in the refrigerator to set.
- In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
- In a separate bowl, whip the cold heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
- Remove the muffin tin from the refrigerator. Spoon the cheesecake filling over the graham cracker crusts, filling each cup to the top.
- Cover the muffin tin with plastic wrap and refrigerate for at least 4 hours, or until set.
- Once set, remove the cheesecake bites from the muffin tin and top each with cherry pie filling.
- Serve chilled and enjoy!
