  • Zest of 2 lemons

  • 2 cups fresh blueberries
  • 2 tablespoons granulated sugar (optional, for sweeter topping)
  • 1 tablespoon lemon juice

Instructions

  1. Combine graham cracker crumbs and granulated sugar in a bowl. Add melted butter and mix well. Press into the bottom of a 9×13 inch baking dish to form a crust. Chill in the fridge.
  2. Beat softened cream cheese until smooth. Add powdered sugar gradually. Mix in lemon juice, zest, and vanilla extract until well blended.
  3. Whip heavy cream until stiff peaks form. Gently fold into the cream cheese mixture.
  4. Spread the lemon filling over the chilled crust and smooth evenly. Cover and refrigerate for 3–4 hours to set.
  5. In a bowl, mix fresh blueberries with lemon juice and optional sugar. Let sit for 10–15 minutes.
  6. Top the set dessert with blueberry mixture and refrigerate an additional 30 minutes before serving.
  7. Slice into squares and serve chilled.
