- 1/4 cup chia seeds
- 3 medium fresh peaches (peeled and diced)

- 1 1/2 cups graham cracker crumbs
- 1/4 cup coconut oil (melted)
Instructions
- In a mixing bowl, combine the graham cracker crumbs and melted coconut oil. Press the mixture firmly into the bottom of an 8×8-inch square baking dish to form an even layer. Place in the refrigerator to set.
- In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add the Greek yogurt, honey, and vanilla extract. Continue mixing until well combined.
- Stir in the chia seeds into the cream cheese mixture. Mix well to ensure the chia seeds are evenly distributed.
- In a small saucepan over medium heat, add the diced peaches and a tablespoon of honey. Cook for about 5-7 minutes until the peaches soften. Remove from heat and let cool slightly.
- Pour the cream cheese filling over the chilled graham cracker crust, spreading it evenly. Top with the warm peach compote.
- Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or until set.
- Once set, cut into squares and serve chilled. Garnish with additional fresh peach slices or a drizzle of honey if desired.
