Description

  • 1 cup plain Greek yogurt
  • 1/4 cup chia seeds
  • 3 medium fresh peaches (peeled and diced)
  • 1/4 cup honey (adjust to taste)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup coconut oil (melted)

Instructions

  1. In a mixing bowl, combine the graham cracker crumbs and melted coconut oil. Press the mixture firmly into the bottom of an 8×8-inch square baking dish to form an even layer. Place in the refrigerator to set.
  2. In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add the Greek yogurt, honey, and vanilla extract. Continue mixing until well combined.
  3. Stir in the chia seeds into the cream cheese mixture. Mix well to ensure the chia seeds are evenly distributed.
  4. In a small saucepan over medium heat, add the diced peaches and a tablespoon of honey. Cook for about 5-7 minutes until the peaches soften. Remove from heat and let cool slightly.
  5. Pour the cream cheese filling over the chilled graham cracker crust, spreading it evenly. Top with the warm peach compote.
  6. Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or until set.
  7. Once set, cut into squares and serve chilled. Garnish with additional fresh peach slices or a drizzle of honey if desired.
