Description

A no-bake peaches and cream pie with a crunchy graham cracker and pretzel crust, filled with a creamy whipped filling and fresh peaches, topped with honey-glazed peach slices for a refreshing summer dessert.

  • 2 medium peaches, chopped
  • Juice of 1/2 lemon
  • 3/4 cup granulated sugar, divided
  • 8 graham crackers
  • 1 1/2 cups pretzels
  • 1 tsp ground cinnamon
  • Pinch of kosher salt
  • 6 Tbsp butter, melted
  • 3/4 cup heavy cream
  • 2 (8-oz.) blocks cream cheese, softened
  • 1/4 cup plain Greek yogurt, preferably whole fat
  • 1 tsp pure vanilla extract
  • 2 medium peaches, thinly sliced
  • 2 Tbsp honey

Instructions

  1. Place chopped peaches, lemon juice, and 2 tablespoons of sugar in a small pot over medium heat. Cook, stirring frequently, for 5–10 minutes until slightly broken down. Let cool.
  2. Pulse graham crackers in a food processor, then add pretzels and pulse until fine. Transfer to a bowl and stir in cinnamon, salt, and 2 tablespoons of sugar. Mix in melted butter.
  3. Press crust mixture into a 9-inch pie plate. Chill in refrigerator while preparing filling.
  4. Whip the heavy cream in a bowl until stiff peaks form. In another bowl, beat cream cheese and Greek yogurt until smooth, then add remaining sugar, vanilla, and salt. Fold in whipped cream and cooled peach mixture.
  5. Pour filling into chilled crust, smooth the top, cover with plastic wrap, and refrigerate for at least 4 hours or until set.
  6. Before serving, toss peach slices with honey and spoon over the top. Slice and enjoy.
