This No-Bake Summer Berry Ice Box Cake is a refreshing and creamy dessert layered with graham crackers, vanilla pudding, whipped cream, and fresh berries, topped with a drizzle of white chocolate.

- 8 oz cream cheese, softened
- 2 (3.4 oz) packages vanilla instant pudding mix
- 2 ½ cups cold milk
- 12 oz Cool Whip (or homemade whipped cream)
- 3 cups fresh strawberries, sliced
- 1 ½ cups fresh blueberries
- 2 oz white chocolate chips
Instructions
- In a large mixing bowl, beat the softened cream cheese and vanilla pudding mix until smooth.
- Gradually add the cold milk while beating until the mixture thickens and becomes creamy.
- Gently fold in the Cool Whip, reserving about ½ cup for the bottom layer and garnish.
- Spread a thin layer of the reserved whipped topping across the bottom of a 9×13-inch pan.
- Place 5 graham crackers side by side across the center of the pan. Add 2 more crackers to cover the edges, breaking them if needed to fit.
- Spread a generous layer of the pudding mixture over the graham crackers.
- Top with an even layer of blueberries and sliced strawberries.
- Add another layer of graham crackers, followed by another pudding layer and more berries.
- Repeat the layering process one more time for a total of three layers.
- Cover the pan with plastic wrap and refrigerate for at least 4 hours, or overnight.
- Melt the white chocolate chips according to package instructions.
- Drizzle melted white chocolate over the top using a spoon or piping bag.
- Garnish with the remaining whipped cream if desired, then slice and serve chilled.
