  • 3 large eggs
  • Zest of 1 large orange

  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (180°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and poppy seeds.
  3. In a large bowl, beat the softened butter and sugar using an electric mixer until light and fluffy, about 3–5 minutes.
  4. Add the sour cream, eggs, orange zest, orange juice, and vanilla extract. Mix until just combined.
  5. Gradually fold in the dry ingredients using a spatula until no flour streaks remain. Do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
