- 1 cup powdered sugar

- 1 teaspoon lemon juice

- 1 teaspoon cinnamon
- Cooking spray or melted butter (for brushing)
- Additional powdered sugar (for dusting)
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, mix softened cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in berries, lemon juice, and cornstarch. Set aside.
- Lay out a tortilla, add a generous scoop of filling in the center. Fold sides toward the center, then roll tightly like a burrito. Repeat with remaining tortillas.
- Sprinkle cinnamon over each rolled chimichanga. Brush with melted butter or spray lightly with cooking spray.
- Place chimichangas seam-side down on a parchment-lined baking sheet. Bake for 15–20 minutes or until golden and crispy.
- Remove from oven, let cool slightly, then dust with additional powdered sugar before serving.
