  • 1 cup powdered sugar

  • 1 teaspoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon cinnamon
  • Cooking spray or melted butter (for brushing)
  • Additional powdered sugar (for dusting)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix softened cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in berries, lemon juice, and cornstarch. Set aside.
  3. Lay out a tortilla, add a generous scoop of filling in the center. Fold sides toward the center, then roll tightly like a burrito. Repeat with remaining tortillas.
  4. Sprinkle cinnamon over each rolled chimichanga. Brush with melted butter or spray lightly with cooking spray.
  5. Place chimichangas seam-side down on a parchment-lined baking sheet. Bake for 15–20 minutes or until golden and crispy.
