  • 2 tsp vanilla extract
  • 1 1/2 tsp ground cinnamon
  • 67 medium bananas, chopped
  • 3/4 cup (98g) all-purpose flour
  • 3/4 cup (169g) firmly packed brown sugar
  • 1 tsp cinnamon
  • 1/2 cup (112g) salted butter, cut into pieces

Instructions

  1. Grease a 9×13 inch casserole dish with butter or cooking spray.
  2. In a large bowl, place bread chunks. In another bowl, whisk eggs, milk, heavy cream, sugars, vanilla, and cinnamon until frothy.
  3. Pour the egg mixture over bread and gently fold in chopped bananas.
  4. Transfer to casserole dish, spread evenly, cover tightly, and refrigerate overnight.
  5. Preheat oven to 350°F (176°C).
  6. Prepare streusel topping: combine flour, brown sugar, and cinnamon; cut in cold butter until coarse crumbs form.
  7. Bake casserole uncovered for 35-40 minutes until set and puffed.
  8. Sprinkle streusel topping evenly over casserole and bake an additional 5 minutes to crisp the topping.
  9. Cool slightly, cut into squares, and serve warm with maple syrup.
