- 3/4 cup (169g) firmly packed brown sugar
- 1 tsp cinnamon
- 1/2 cup (112g) salted butter, cut into pieces
Instructions
- Grease a 9×13 inch casserole dish with butter or cooking spray.
- In a large bowl, place bread chunks. In another bowl, whisk eggs, milk, heavy cream, sugars, vanilla, and cinnamon until frothy.
- Pour the egg mixture over bread and gently fold in chopped bananas.
- Transfer to casserole dish, spread evenly, cover tightly, and refrigerate overnight.
- Preheat oven to 350°F (176°C).
- Prepare streusel topping: combine flour, brown sugar, and cinnamon; cut in cold butter until coarse crumbs form.
- Bake casserole uncovered for 35-40 minutes until set and puffed.
- Sprinkle streusel topping evenly over casserole and bake an additional 5 minutes to crisp the topping.
- Cool slightly, cut into squares, and serve warm with maple syrup.
