Description

Overnight Breakfast Casserole is a wholesome and comforting dish made with layers of bread, sweet berries, and a creamy custard mixture. Perfect for special mornings, it’s soaked overnight and baked to golden perfection, delivering a soft, rich texture in every bite.


Ingredients

  • 6 cups berries (approx. 32 oz) – strawberries, blueberries, raspberries, or a mix
  • 1 lb thick bread – challah, brioche, or whole grain
  • 1 1/3 cup applesauce or mashed banana
  • 2/3 cup milk of choice (dairy or plant-based)
  • 2/3 cup egg whites or additional milk
  • 1/4 cup pure maple syrup, agave, or honey
  • 1 tsp pure vanilla extract (optional)

Instructions

  1. Preheat oven to 300°F (150°C). If bread is fresh, dry it in the oven for 15 minutes without browning.
  2. Grease a 9×13 inch baking dish. Cut bread into 1-inch cubes and spread evenly in the dish.
  3. In a bowl, whisk applesauce or banana, milk, egg whites or extra milk, maple syrup, and vanilla (if using) until smooth.
  4. Pour custard evenly over the bread. Gently press down to soak. Top with berries.
  5. Cover and refrigerate overnight or at least 4 hours.
  6. Preheat oven to 350°F (175°C). Uncover and bake for about 1 hour until golden and set.
  7. Let cool slightly before serving warm or chilled.

Notes

  • Use stale bread for best texture.
  • Customize with cinnamon, nutmeg, or nuts for extra flavor.
  • Make it vegan by using flaxseed meal instead of egg whites and plant-based milk.
