Overnight Breakfast Casserole is a wholesome and comforting dish made with layers of bread, sweet berries, and a creamy custard mixture. Perfect for special mornings, it’s soaked overnight and baked to golden perfection, delivering a soft, rich texture in every bite.

- 6 cups berries (approx. 32 oz) – strawberries, blueberries, raspberries, or a mix
- 1 lb thick bread – challah, brioche, or whole grain
- 1 1/3 cup applesauce or mashed banana
- 2/3 cup milk of choice (dairy or plant-based)
- 2/3 cup egg whites or additional milk
- 1/4 cup pure maple syrup, agave, or honey
- 1 tsp pure vanilla extract (optional)
Instructions
- Preheat oven to 300°F (150°C). If bread is fresh, dry it in the oven for 15 minutes without browning.
- Grease a 9×13 inch baking dish. Cut bread into 1-inch cubes and spread evenly in the dish.
- In a bowl, whisk applesauce or banana, milk, egg whites or extra milk, maple syrup, and vanilla (if using) until smooth.
- Pour custard evenly over the bread. Gently press down to soak. Top with berries.
- Cover and refrigerate overnight or at least 4 hours.
- Preheat oven to 350°F (175°C). Uncover and bake for about 1 hour until golden and set.
- Let cool slightly before serving warm or chilled.
Notes
- Use stale bread for best texture.
- Customize with cinnamon, nutmeg, or nuts for extra flavor.
- Make it vegan by using flaxseed meal instead of egg whites and plant-based milk.
- Can be prepared 24 hours in advance for convenience.
