Ingredients

  • 1 cup rolled oats
  • 1 cup almond milk (or any dairy-free alternative)
  • 1/2 cup Greek yogurt
  • 2 tablespoons honey (plus extra for drizzling)
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, hulled and halved
  • Pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C). In a baking dish, combine the halved strawberries with 1 tablespoon of honey and a pinch of salt. Toss to coat the strawberries evenly. Spread them out in a single layer and roast for about 20-25 minutes, or until soft and caramelized. Let cool slightly.
  2. In a medium bowl, combine the rolled oats, almond milk, Greek yogurt, 1 tablespoon of honey, vanilla extract, and a pinch of salt. Stir well until thoroughly mixed.
  3. Divide the oat mixture evenly into two jars or containers. Spoon the roasted strawberries generously over the top of each jar, including some syrupy juices.
  4. Cover the jars with lids or plastic wrap and refrigerate overnight, or for at least 4 hours.
  5. In the morning, stir the oats and drizzle extra honey on top if desired. Enjoy your creamy overnight oats with roasted strawberries!

Notes

  • Store in an airtight container in the refrigerator for up to 3 days.
  • If you prefer warm oats, microwave for about 30 seconds before serving.
  • For a vegan option, substitute Greek yogurt with plant-based yogurt.
