- 1 cup rolled oats
- 1 cup almond milk (or any dairy-free alternative)
- 1/2 cup Greek yogurt
- 2 tablespoons honey (plus extra for drizzling)
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, hulled and halved
- Pinch of salt
Instructions
- Preheat your oven to 400°F (200°C). In a baking dish, combine the halved strawberries with 1 tablespoon of honey and a pinch of salt. Toss to coat the strawberries evenly. Spread them out in a single layer and roast for about 20-25 minutes, or until soft and caramelized. Let cool slightly.
- In a medium bowl, combine the rolled oats, almond milk, Greek yogurt, 1 tablespoon of honey, vanilla extract, and a pinch of salt. Stir well until thoroughly mixed.
- Divide the oat mixture evenly into two jars or containers. Spoon the roasted strawberries generously over the top of each jar, including some syrupy juices.
- Cover the jars with lids or plastic wrap and refrigerate overnight, or for at least 4 hours.
- In the morning, stir the oats and drizzle extra honey on top if desired. Enjoy your creamy overnight oats with roasted strawberries!
Notes
- Store in an airtight container in the refrigerator for up to 3 days.
- If you prefer warm oats, microwave for about 30 seconds before serving.
- For a vegan option, substitute Greek yogurt with plant-based yogurt.
- Maple syrup can replace honey for a plant-based sweetener.
