Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 ripe peaches, sliced
  • 1/2 cup fresh basil leaves, chopped
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Pat the chicken breasts dry and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken breasts and cook for 6-7 minutes on one side until golden brown, then flip and cook for another 5-6 minutes until the internal temperature reaches 165°F (75°C).
  4. Remove chicken from the skillet and set aside.
  5. Add minced garlic to the skillet and sauté for 30 seconds until fragrant.
  6. Add sliced peaches and cook for 3-4 minutes until they start to soften.
  7. Pour in balsamic vinegar and stir to combine, cooking for another 2-3 minutes.
  8. Return chicken to the skillet, sprinkle with basil, and cook for an additional 2-3 minutes.
  9. Plate the chicken and peaches, drizzling with remaining sauce and garnishing with fresh basil.
