Description

Peach Blueberry Pie is a simple and comforting dessert that features sweet peaches and tart blueberries in a creamy, custard-like filling, all baked into an impossibly easy self-forming crust.

  • 2 cups fresh peaches, sliced
  • 1 cup granulated sugar
  • 1 cup milk
  • 1/2 cup all-purpose flour
  • 3 large eggs
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine sliced peaches and blueberries. If using frozen fruit, thaw and drain excess juice. Sprinkle with half of the sugar and set aside.
  3. In a separate bowl, whisk together the remaining sugar, milk, flour, eggs, melted butter, vanilla extract, salt, and cinnamon until smooth.
  4. Grease a pie dish. Pour one-third of the custard mixture into the dish, then add the fruit mixture evenly. Pour the remaining custard over the top, fully covering the fruit.
  5. Bake for 45–55 minutes, until golden brown and a knife inserted in the center comes out clean.
  6. Let the pie cool on a wire rack for at least 30 minutes before serving. Serve warm or at room temperature.
