- 4 medium fresh peaches, pitted and chopped
- 1 cup coconut milk (full-fat for creaminess)
- 1/4 cup chia seeds
- 2 tablespoons honey (adjust based on sweetness preference)
- 1 tablespoon freshly squeezed lemon juice
- 1/2 cup water (optional, for adjusting consistency)
Instructions
- Prepare the peaches by washing, pitting, and chopping them into small pieces.
- Blend the chopped peaches with honey, lemon juice, and coconut milk until smooth. Add water if needed for consistency.
- Pour the mixture into a bowl and stir in the chia seeds. Let it sit for 10-15 minutes.
- Stir the mixture again and pour it into popsicle molds, filling them about 3/4 full.
- If the molds have stick holders, insert them; otherwise, freeze for an hour before inserting wooden sticks.
- Freeze the molds for at least 4-6 hours or until solid.
- To unmold, run warm water over the outside of the molds and gently pull on the sticks.
- Serve immediately or store in a freezer-safe bag or container.
Notes
- For a vegan option, substitute honey with maple syrup.
- Use almond milk or oat milk if allergic to coconut.
