Instructions
- In a medium bowl, combine the almond milk, chia seeds, honey, and vanilla extract. Stir well to ensure the chia seeds are evenly distributed. Let the mixture sit for about 5 minutes, then stir again to prevent clumping.
- Cover the bowl and place it in the refrigerator for at least 2 hours, or overnight.
- While the chia pudding is setting, wash and dice the peaches. In a blender or food processor, blend the diced peaches until smooth.
- Once the chia pudding is ready, layer the chia pudding and peach puree in clear glasses or bowls.
- Sprinkle granola on top of the final layer of chia pudding and garnish with fresh mint leaves.
