Peach Chia Pudding Parfaits are a delightful treat that combines creamy chia pudding with the sweet, juicy flavor of fresh peaches. This dessert is not only delicious but also packed with nutrients, making it a guilt-free indulgence.


Ingredients

  • 1 cup almond milk (or any milk of choice)
  • 1/4 cup chia seeds
  • 2 tablespoons honey (or maple syrup)
  • 1 teaspoon vanilla extract
  • 2 ripe peaches, diced
  • Granola for topping
  • Fresh mint leaves for garnish

Instructions

  1. In a medium bowl, combine the almond milk, chia seeds, honey, and vanilla extract. Stir well to ensure the chia seeds are evenly distributed. Let the mixture sit for about 5 minutes, then stir again to prevent clumping.
  2. Cover the bowl and place it in the refrigerator for at least 2 hours, or overnight.
  3. While the chia pudding is setting, wash and dice the peaches. In a blender or food processor, blend the diced peaches until smooth.
  4. Once the chia pudding is ready, layer the chia pudding and peach puree in clear glasses or bowls.
  5. Sprinkle granola on top of the final layer of chia pudding and garnish with fresh mint leaves.
