Description

Ingredients

  • Almond milk – 1 cup (240 ml) (or any milk of your choice)
  • Chia seeds – 1/4 cup (40 g)
  • Ripe peaches – 2 medium, diced
  • Honey or maple syrup – 2 tablespoons (optional)
  • Vanilla extract – 1 teaspoon
  • Salt – a pinch

Instructions

  1. In a mixing bowl, whisk together the almond milk, chia seeds, honey (if using), vanilla extract, and a pinch of salt until well combined.
  2. Cover the bowl and let it sit for about 10 minutes to allow the chia seeds to start thickening.
  3. After 10 minutes, stir the mixture again to break up any clumps. Cover and refrigerate for at least 2 hours, or overnight for best results.
  4. Once the pudding has set, fold in the diced peaches. Serve chilled in bowls or jars and enjoy!
