Ingredients
- Almond milk – 1 cup (240 ml) (or any milk of your choice)
- Chia seeds – 1/4 cup (40 g)
- Ripe peaches – 2 medium, diced
- Honey or maple syrup – 2 tablespoons (optional)
- Vanilla extract – 1 teaspoon
- Salt – a pinch
Instructions
- In a mixing bowl, whisk together the almond milk, chia seeds, honey (if using), vanilla extract, and a pinch of salt until well combined.
- Cover the bowl and let it sit for about 10 minutes to allow the chia seeds to start thickening.
- After 10 minutes, stir the mixture again to break up any clumps. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Once the pudding has set, fold in the diced peaches. Serve chilled in bowls or jars and enjoy!
