Description

  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar

  • 1 teaspoon ground cinnamon
  • 3 cups canned peach slices (in juice, drained)
  • ½ cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1 tablespoon cornstarch (optional)

Instructions

  1. Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until it resembles wet sand and press into the bottom of a 9-inch springform pan. Bake for 8-10 minutes and set aside to cool.
  2. In a large bowl, beat softened cream cheese until smooth. Add granulated sugar and vanilla extract and mix until well combined. Add eggs one at a time, mixing well after each. Stir in sour cream and cinnamon until smooth.
  3. Pour cheesecake batter over the cooled crust. In a separate bowl, mix peaches with brown sugar, lemon juice, cinnamon, and optional cornstarch. Spoon the peach mixture evenly over the cheesecake filling.
  4. Bake for 60-70 minutes or until center is set but slightly jiggly. Turn off the oven, crack the door, and let cool for 1 hour. Then refrigerate for at least 4 hours or overnight before serving.
