Description

  • 1 tablespoon fresh lemon juice
  • 2 tablespoons salted butter (or unsalted with a pinch of salt)
  • 1/2 cup light brown sugar
  • 4 teaspoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon pure vanilla extract
  • 10 egg roll wrappers
  • 2 tablespoons water (for brushing)
  • Vegetable oil (for frying)
  • Powdered sugar (for dusting, optional)
  • Vanilla Bean Dipping Sauce:
  • 3/4 cup powdered sugar
  • 1/2 teaspoon vanilla bean paste (or vanilla extract)
  • 23 tablespoons milk
  • A pinch of salt

Instructions

  1. In a saucepan over medium heat, combine chopped peaches, lemon juice, butter, brown sugar, cornstarch, and ground cinnamon. Stir continuously and bring to a boil.
  2. Reduce heat and simmer for 10 minutes, stirring occasionally until thick and syrupy. Remove from heat and stir in vanilla extract. Let cool.
  3. Place an egg roll wrapper on a flat surface with one corner facing you. Brush edges lightly with water.
  4. Spoon about 2 tablespoons of cooled peach filling onto the center of the wrapper.
  5. Fold sides over the filling and roll tightly from bottom corner to top, sealing the edges.
  6. Heat vegetable oil in a deep fryer or skillet to 350°F (180°C).
  7. Fry egg rolls in batches for 5-6 minutes until golden brown. Drain on paper towels.
  8. Optionally dust fried egg rolls with powdered sugar.
  9. For dipping sauce, whisk powdered sugar, vanilla bean paste, milk, and a pinch of salt until smooth. Adjust milk for desired consistency.
