- 1 tablespoon fresh lemon juice
- 2 tablespoons salted butter (or unsalted with a pinch of salt)
- 1/2 cup light brown sugar
- 4 teaspoons cornstarch
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon pure vanilla extract
- 10 egg roll wrappers
- 2 tablespoons water (for brushing)
- Vegetable oil (for frying)
- Powdered sugar (for dusting, optional)
- Vanilla Bean Dipping Sauce:
- 3/4 cup powdered sugar
- 1/2 teaspoon vanilla bean paste (or vanilla extract)
- 2–3 tablespoons milk
- A pinch of salt
Instructions
- In a saucepan over medium heat, combine chopped peaches, lemon juice, butter, brown sugar, cornstarch, and ground cinnamon. Stir continuously and bring to a boil.
- Reduce heat and simmer for 10 minutes, stirring occasionally until thick and syrupy. Remove from heat and stir in vanilla extract. Let cool.
- Place an egg roll wrapper on a flat surface with one corner facing you. Brush edges lightly with water.
- Spoon about 2 tablespoons of cooled peach filling onto the center of the wrapper.
- Fold sides over the filling and roll tightly from bottom corner to top, sealing the edges.
- Heat vegetable oil in a deep fryer or skillet to 350°F (180°C).
- Fry egg rolls in batches for 5-6 minutes until golden brown. Drain on paper towels.
- Optionally dust fried egg rolls with powdered sugar.
- For dipping sauce, whisk powdered sugar, vanilla bean paste, milk, and a pinch of salt until smooth. Adjust milk for desired consistency.
