Description
Peach Cobbler French Toast is a delightful twist on a classic breakfast favorite, featuring soft, fluffy bread soaked in a sweet peach mixture and baked to perfection.
Ingredients
Scale
- 8 thick slices of brioche bread
- 3 medium ripe peaches, peeled and diced
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup milk
- Powdered sugar for dusting
- 4 tablespoons butter for cooking
- A pinch of salt
Instructions
- In a medium bowl, combine the diced peaches, granulated sugar, and ground cinnamon. Mix well and set aside.
- In another bowl, beat the softened cream cheese with the vanilla extract until smooth and creamy. Set aside.
- Take a slice of brioche bread and spread a generous layer of the cream cheese mixture on one side. Top with a spoonful of the peach filling, then place another slice of brioche on top to create a sandwich. Repeat for the remaining slices.
- In a large mixing bowl, whisk together the eggs, milk, and a pinch of salt until well combined.
- Carefully dip each stuffed sandwich into the egg mixture, ensuring both sides are well-coated.
- In a large skillet or griddle, melt 2 tablespoons of butter over medium heat. Add the stuffed French toast sandwiches and cook for about 3-4 minutes on each side, or until golden brown and crisp.
- Once cooked, remove the French toast from the skillet, dust with powdered sugar, and serve warm.
Notes
- For a dairy-free option, use almond milk or coconut milk.
- If gluten-free, choose gluten-free bread.
