  • 3 medium ripe peaches, peeled and diced
  • 8 oz cream cheese, softened

  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup milk
  • Powdered sugar for dusting
  • 4 tablespoons butter for cooking
  • A pinch of salt

Instructions

  1. In a medium bowl, combine the diced peaches, granulated sugar, and ground cinnamon. Mix well and set aside.
  2. In another bowl, beat the softened cream cheese with the vanilla extract until smooth and creamy. Set aside.
  3. Take a slice of brioche bread and spread a generous layer of the cream cheese mixture on one side. Top with a spoonful of the peach filling, then place another slice of brioche on top to create a sandwich. Repeat for the remaining slices.
  4. In a large mixing bowl, whisk together the eggs, milk, and a pinch of salt until well combined.
  5. Carefully dip each stuffed sandwich into the egg mixture, ensuring both sides are well-coated.
  6. In a large skillet or griddle, melt 2 tablespoons of butter over medium heat. Add the stuffed French toast sandwiches and cook for about 3-4 minutes on each side, or until golden brown and crisp.
