Ingredients

  • 4 medium fresh peaches, peeled and sliced
  • 2 cups pancake mix
  • 1 cup milk
  • 2 large eggs
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon (plus extra for sprinkling)
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Toss the sliced peaches with 1 tablespoon of sugar and a sprinkle of cinnamon in a medium bowl.
  3. In a large mixing bowl, combine pancake mix, remaining sugar, milk, eggs, ground cinnamon, and vanilla extract. Whisk until smooth.
  4. Pour melted butter into the batter and gently fold until just incorporated.
  5. Pour half of the batter into a prepared baking dish, spread evenly, and layer peach slices on top. Pour remaining batter over peaches.
  6. Bake for 30-35 minutes, or until golden brown and a toothpick comes out clean.
  7. Let cool for 10 minutes, sprinkle with cinnamon, cut into squares, and serve warm with maple syrup or whipped cream.
