- 4 medium fresh peaches, peeled and sliced
- 2 cups pancake mix
- 1 cup milk
- 2 large eggs
- 1/4 cup sugar
- 1 teaspoon ground cinnamon (plus extra for sprinkling)
- 1 teaspoon vanilla extract
- 1/2 cup butter, melted
Instructions
- Preheat your oven to 350°F (175°C).
- Toss the sliced peaches with 1 tablespoon of sugar and a sprinkle of cinnamon in a medium bowl.
- In a large mixing bowl, combine pancake mix, remaining sugar, milk, eggs, ground cinnamon, and vanilla extract. Whisk until smooth.
- Pour melted butter into the batter and gently fold until just incorporated.
- Pour half of the batter into a prepared baking dish, spread evenly, and layer peach slices on top. Pour remaining batter over peaches.
- Bake for 30-35 minutes, or until golden brown and a toothpick comes out clean.
- Let cool for 10 minutes, sprinkle with cinnamon, cut into squares, and serve warm with maple syrup or whipped cream.
Notes
- Store leftovers in an airtight container in the refrigerator for up to three days.
- To reheat, warm individual portions in the microwave.
